Meg invites her mom Mimi into her kitchen to share her delicious Apple Puffed Pancakes recipe. It was her favorite dish growing up in Connecticut, and when you hear what’s inside you’ll be dying to try it yourself!
Apple Puffed Pancakes is a combination of flan and puffed pancakes, and although most people eat it for breakfast or brunch, Meg admits she loves having it for lunch and dinner too!
Here’s what you’ll need:
- sliced apples
- eggs
- flour
- butter
- brown sugar
- cinnamon
- salt
(I’m sure you have all of these in your pantry somewhere!)
Start off by making the batter. Whisk all the eggs together, then add the milk, flour and salt. Mimi reminds us not to skip the salt, “It’s important!” Preheat your oven to 425 degrees. Put your butter in a dish and melt it in the oven for a few minutes. Pull out the dish, add the apple slices into the dish on top of the butter and put back into the oven until the butter sizzles. Then, put the batter, brown sugar and cinnamon onto the warm apples and put back into the oven for a final time. Bake for about 20 minutes or till it’s beautifully puffed and golden.
